Baked Spinach Mushroom Tortillas
Ingredients:
- 4 tortillas (8 inch)
- Olive oil (optional, enough to lightly coat the tortillas)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 cups roughly chopped spinach
- 8 ounces sliced mushrooms
Preparation:
- Preheat the oven to 400°F (200°C).
- Place the sliced mushrooms in a microwave-safe bowl and microwave for 2 ½ to 3 minutes to soften. Drain and set aside.
- Lightly brush one side of each tortilla with olive oil (if using) and place them on a baking sheet, oiled side down.
- Distribute half of the shredded mozzarella and cheddar cheese evenly over one half of each tortilla. Layer with chopped spinach, softened mushrooms, and the remaining cheese.
- Fold the tortillas in half to cover the fillings. Optionally, garnish with additional mushrooms and cheese.
- Bake the tortillas in the preheated oven for about 6 minutes. Flip each tortilla and bake for an additional 6-7 minutes, until the cheese is melted and the tortillas are golden brown.
