Bacon Onion Tomato Pie

Ingredients:

  • 9-inch pie crust
  • 4 slices of diced cooked bacon
  • 5 peeled and sliced tomatoes
  • 1 chopped onion
  • 2 tablespoons milk
  • 1/2 cup mayonnaise
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup crushed Ritz crackers
  • 2 teaspoons melted butter
  • 2 sliced green onions
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Prick the pie crust with a fork and bake for 10 minutes.
  3. Arrange a layer of sliced tomatoes at the bottom of the pie crust. Add the chopped onion, diced cooked bacon, and season with salt and pepper. Follow with another layer of tomatoes, seasoning again with salt and pepper.
  4. In a separate bowl, mix the milk, mayonnaise, and shredded cheddar cheese. Spread this mixture over the tomatoes.
  5. In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture over the cheese layer.
  6. Bake the pie in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbling.
  7. Remove the pie from the oven and allow it to cool for a few minutes.
  8. Garnish with sliced green onions before serving.
