Apple Pie Cupcakes Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 2 cups peeled, diced apples
- 1/4 cup brown sugar
- 1 tsp cornstarch
Directions:
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a large mixing bowl, cream together butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Slowly add the dry ingredients to the butter mixture, alternating with milk, mixing just until combined.
- In a small bowl, toss diced apples with brown sugar and cornstarch.
- Gently fold the diced apples into the batter for this delightful fall dessert recipe.
- Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
