  • 1½ cups cooking oil
  • 2 cups sugar
  • 4 eggs

  • 3½ cups Granny Smith apples (approximately 3-4 apples), peeled and chopped
  • 1 cup chopped pecans

Caramel Glaze:

  • ¾ cups butter (1½ sticks)
  • 1 cup light brown sugar
  • ¼ cup milk
  • 1 tsp vanilla extract

Instructions:

  1. Preparation:

    • Preheat oven to 325°F (165°C).
    • Grease and flour a tube pan generously (or use two loaf pans as substitutes).
  2. Cake Batter:

    • In a large mixing bowl, combine oil, sugar, and eggs, beating until creamy.
    • In a separate medium bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the large bowl, mixing until well incorporated.
    • Stir in vanilla extract.
    • Fold in chopped apples and pecans until evenly distributed throughout the batter.
  3. Baking:

    • Pour the batter into the prepared pan(s), spreading it evenly.
    • Bake in the preheated oven for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
    • If using loaf pans, check for doneness after about 50 minutes.
  4. Caramel Glaze:

    • In a small saucepan, melt the butter over low heat.
    • Stir in brown sugar and milk, allowing it to come to a gentle boil.
    • Reduce the heat to a simmer, stirring constantly, and let it cook for about 10 minutes.
    • Remove from heat and stir in vanilla extract. Let the glaze cool slightly.
  5. Finishing Touches:

    • Once the caramel glaze has cooled slightly but is still pourable, drizzle it over the top of the cake.
    • Allow the cake to cool completely before slicing and serving.
