AlphaJors Cornstarch Cookies
Ingredients:
- 300g pastry dulce de leche
- 150g cornstarch
- 70g butter
- 3 egg yolks
- 50g powdered sugar
- 1 tsp grated lemon peel
- 1 tbsp vanilla essence
- 1 tsp baking powder
- Grated coconut (as needed)
Preparation:
- Soften butter in a bowl.
- Add sugar and beat until a creamy consistency is achieved.
- Infuse with vanilla essence and lemon zest.
- Incorporate egg yolks one by one, beating thoroughly.
- Add cornstarch, preferably sifted with baking powder.
- Shape into a bun, minimizing handling of the dough.
- Wrap in film and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to ½ cm thickness. Cut into discs (usually 4 or 5 cm in diameter).
- Place discs on a buttered plate, ensuring space between to prevent sticking.
- Preheat the oven to approximately 200ºC and bake the discs for 5 minutes until lightly golden, avoiding overcooking.
- Carefully remove cooled discs from the plate with a spatula before assembling.
