Savory Zucchini Pancakes
Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon baking powder
- 2 tablespoons olive oil or vegetable oil (for frying)
Preparation:
1. Preparing the Zucchini:
Place the grated zucchini in a colander and sprinkle with salt. Allow it to sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or paper towels to squeeze out as much liquid as possible from the zucchini.
2. Making the Batter:
In a large bowl, mix the grated zucchini, flour, Parmesan cheese, eggs, green onions, garlic, black pepper, paprika, and baking powder until well combined.
3. Frying the Pancakes:
Heat the oil in a large skillet over medium heat. Drop spoonfuls of the zucchini batter into the skillet, flattening them gently with a spatula to form pancakes. Cook each side for about 3-4 minutes or until golden brown and thoroughly cooked.
4. Serving:
Remove the pancakes from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve the savory zucchini pancakes hot, optionally with a dollop of sour cream or Greek yogurt.
