Chicken Spinach Lasagna

Ingredients

For the Filling:

  • 2 cups cooked, shredded chicken
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Sauce:

  • 2 cups marinara sauce
  • 1/2 cup heavy cream

For the Lasagna:

  • 9 lasagna noodles, cooked according to package instructions
  • 1 cup shredded mozzarella cheese (for topping)
  • 1/4 cup grated Parmesan cheese (for topping)
  • Fresh basil or parsley, chopped (for garnish)
  • 2 green onions, chopped (for garnish)

Preparation

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

2. Prepare the Filling:

In a large bowl, mix the shredded chicken, chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, minced garlic, salt, and pepper until well combined.

3. Prepare the Sauce:

In a medium saucepan, combine the marinara sauce and heavy cream. Heat over medium heat, stirring occasionally, until the mixture is warm and well blended.

4. Assemble the Lasagna:

  1. Spread a thin layer of the sauce mixture on the bottom of the prepared baking dish.
  2. Place 3 lasagna noodles over the sauce.
  3. Spread 1/3 of the chicken and spinach filling over the noodles.
  4. Pour a portion of the sauce over the filling.
  5. Repeat the layers (noodles, filling, sauce) two more times, finishing with a layer of sauce on top.

5. Top the Lasagna:

Sprinkle the remaining 1 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese evenly over the top.

6. Bake:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.

7. Garnish and Serve:

Let the lasagna cool for about 10 minutes before slicing. Garnish with chopped fresh basil or parsley and green onions.
