Ingredients:

  • 2 Eggs
  • 1.5 cups Milk
  • 1.5 cups Water
  • 1 tablespoon Sugar
  • 1 teaspoon Yeast
  • 1 teaspoon Baking Soda
  • 3.5 cups Flour
  • 1 teaspoon Salt
  • 1 Green or Red Bell Pepper
  • 1 Tomato
  • 1 Potato
  • 120 grams Cheese (any type, except processed)

Instructions:

Prepare the Batter:

  1. In a mixing bowl, beat the eggs.
  2. Add milk and water to the eggs, mixing well.
  3. Stir in the sugar.
  4. Add yeast and baking soda, stirring to combine.
  5. Gradually incorporate the flour, mixing to avoid lumps.
  6. Add salt and continue mixing until you achieve a smooth batter.
  7. Let the batter rest for 15-20 minutes to rise.

Prepare the Vegetables and Cheese:

  1. Dice the bell pepper.
  2. Dice the tomato.
  3. Peel and grate the potato.
  4. Grate the cheese.

Combine Batter and Ingredients:

  1. Gently fold the diced pepper, tomato, grated potato, and cheese into the batter.

Cook the Pancakes:

  1. Heat a pan or griddle over medium heat.
  2. Pour ladlefuls of the batter onto the hot surface, forming pancakes.
  3. Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side.
