Baked Tangerine Chicken

Ingredients:

  • Chicken pieces
  • 300ml mandarin juice
  • 1 onion
  • 1 tablespoon dehydrated garlic powder
  • 1 tablespoon oregano
  • 1 teaspoon sweet paprika
  • Ground black pepper
  • Chicken broth or Avecrem bouillon cube
  • Olive oil
  • Salt

Preparation:

  1. Season the chicken pieces with salt and pepper.
  2. In a bowl, mix the finely chopped onion, mandarin juice, oregano, sweet paprika, and garlic powder. Pour this mixture over the chicken pieces, ensuring they are well-coated. Cover with plastic wrap and marinate in the refrigerator overnight for best results.
  3. Preheat your oven to 190°C (375°F).
  4. Lightly brush the bottom of a baking dish with olive oil and arrange the drained chicken pieces in the dish. Place it in the oven.
  5. In a saucepan, pour the marinade juices and add half a glass of chicken broth. Cook over medium heat until the mixture is reduced by half.
  6. Pour the reduced marinade over the chicken and continue baking for about an hour. Occasionally brush the chicken with the juices from the pan to keep it moist.
  7. For the final touch, switch your oven to the grill setting and brown the chicken to your liking.
  8. Serve the baked tangerine chicken with white rice or French fries and a fresh salad.
