Chocolate Salami Recipe

Ingredients:

  • 200 grams (about 7 oz) digestive biscuits or plain cookies, broken into small pieces
  • 100 grams (about 3.5 oz) unsalted butter
  • 100 grams (about 3.5 oz) dark chocolate, chopped
  • 100 grams (about 3.5 oz) sugar
  • 1 large egg
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (such as almonds, hazelnuts, or walnuts)
  • 1/4 cup raisins or dried cranberries (optional)
  • Powdered sugar or finely chopped nuts for coating

Instructions:

Prepare the Chocolate Mixture:

  1. In a heatproof bowl, melt the butter and dark chocolate together over a pot of simmering water using the double boiler method. Stir until smooth.
  2. Remove the bowl from the heat and let it cool slightly.
  3. Add the sugar and cocoa powder to the melted chocolate mixture and stir until well combined.
  4. Beat the egg and quickly stir it into the mixture to incorporate.
  5. Stir in the vanilla extract.

Combine the Ingredients:

  1. In a large bowl, combine the broken biscuits, chopped nuts, and dried fruits (if using).
  2. Pour the chocolate mixture over the biscuit mixture and stir until everything is well coated.

Shape the Salami:

  1. Lay out a large piece of plastic wrap or parchment paper on a flat surface.
  2. Spoon the mixture onto the plastic wrap and shape it into a log, about 10-12 inches long.
  3. Wrap the log tightly in the plastic wrap, twisting the ends to seal.
  4. Refrigerate the log for at least 2-3 hours or until firm.

Coat and Serve:

  1. Once the chocolate salami is firm, remove it from the refrigerator and unwrap it.
  2. Roll the log in powdered sugar or finely chopped nuts to coat the outside.
  3. Slice the chocolate salami into 1/2-inch thick slices and serve.
