Chocolate-Covered Coconut Bars

Ingredients:

  • 3 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp coconut oil (or vegetable oil)

Instructions:

Prepare the Coconut Filling:

  1. In a medium bowl, thoroughly mix the shredded coconut, sweetened condensed milk, and vanilla extract.
  2. Shape the mixture into small rectangular bars using your hands. Place them on a baking sheet lined with parchment paper.
  3. Freeze the bars for at least 30 minutes, or until they are firm.

Prepare the Chocolate Coating:

  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  2. Alternatively, you can melt the chocolate and coconut oil in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth.

Coat the Coconut Bars:

  1. Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it is completely coated. Let any excess chocolate drip off.
  2. Place the chocolate-covered bars back onto the parchment-lined baking sheet.

Set the Chocolate:

  1. Refrigerate the bars for about 20 minutes, or until the chocolate is set.

Serve:

  1. Once the chocolate has set, the bars are ready to be served. Store any leftovers in an airtight container in the refrigerator.
