Fluffy Japanese pancakes are renowned for their light and airy texture, becoming a global sensation. Ingredients:

  • 2 egg yolks
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon baking powder
  • 1/2 cup cake flour
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons granulated sugar
  • Vegetable oil

Instructions:

Prepare the Egg Yolk Mixture:

  1. In a mixing bowl, whisk together the egg yolks, milk, and vanilla essence until the mixture thickens.
  2. Sift the baking powder and cake flour into the bowl, then whisk until well combined. Set aside.

Beat the Egg Whites:

  1. In a separate bowl, add the cream of tartar to the egg whites.
  2. Whisk until the mixture becomes light and frothy.
  3. Gradually add the granulated sugar while continuing to whisk until stiff peaks form.

Combine the Mixtures:

  1. Gently fold a portion of the egg white mixture into the egg yolk mixture to lighten it.
  2. Carefully fold in the remaining egg white mixture until fully incorporated.
  3. Transfer the batter to a piping bag.

Cook the Pancakes:

  1. Preheat a pan over low heat for 2 to 3 minutes and lightly grease with vegetable oil.
  2. Pipe the batter into the pan, forming pancakes approximately 3 inches wide and 3 inches tall.
  3. Cover the pan and cook for 6 to 7 minutes.
  4. After 6 to 7 minutes, gently lift the pancakes to check if the bottoms are golden brown. If so, carefully flip them.
  5. Cover the pan again and cook for an additional 4 to 5 minutes, until the other side is golden brown.

Serve:

  1. Transfer the pancakes to a serving platter.
  2. Garnish with freshly cut fruits such as blueberries, kiwis, and strawberries.
  3. Drizzle with maple syrup or honey, and dust with powdered sugar.
