Ingredients

  • 3 8-inch flour tortillas
  • 1 pound lean ground beef
  • 1/2 onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1/2 cup sour cream
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Cook Beef and Onion: In a skillet, cook the ground beef and chopped onion over medium heat until the beef is fully browned, about 5-6 minutes. Drain any excess fat.
  3. Season and Simmer: Add the taco seasoning, water, and black beans to the skillet. Stir well and simmer for about 2 minutes until the mixture thickens.
  4. Prepare the Sauce: In a bowl, combine the diced tomatoes with green chiles and sour cream.
  5. Assemble the Casserole: Lightly coat an 8-inch baking pan with nonstick spray. Lay one tortilla at the bottom of the pan. Spread half of the beef mixture over the tortilla, followed by half of the tomato and sour cream sauce, and one-third of the shredded cheese. Repeat these layers, finishing with a top layer of cheese.
  6. Bake: Cover the casserole with foil and bake in the preheated oven for 30-40 minutes until hot and bubbly.
  7. Finish and Serve: Remove the foil and bake for an additional 5 minutes to lightly brown the cheese. Let the casserole stand for 5 minutes before serving. Add your favorite toppings and enjoy!
