Ingredients

For the Steak:

  • 4 cube steaks (approximately 1/2 pound each)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil for frying

For the Gravy:

  • 1/4 cup pan drippings
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • Salt and pepper, to taste

Directions

  1. Prepare the Breading Mixture: In a shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, and pepper. This will be your breading mixture.
  2. Mix the Egg Wash: In a separate bowl, whisk together the eggs and 1/4 cup of milk until well blended.
  3. Bread the Steaks: Dredge each steak in the flour mixture, shaking off any excess. Dip the steak in the egg mixture, then coat it again in the flour mixture. Place the breaded steaks on a wire rack to rest.
  4. Fry the Steaks: Pour enough vegetable oil into a large skillet to cover the bottom and heat over medium-high heat. Fry the steaks in batches if necessary, cooking each for about 3-4 minutes per side, until golden brown and crisp. Transfer the cooked steaks to a plate and cover with foil to keep warm.
  5. Make the Gravy: Drain the excess oil from the skillet, leaving about 1/4 cup of pan drippings. Add the flour and whisk over medium heat until a golden paste forms. Gradually pour in the milk, whisking continuously until the gravy thickens, about 5 minutes. Season with salt and pepper to taste.
  6. Serve: Serve the fried steaks with generous spoonfuls of the creamy gravy.
