Ingredients

  • 2 pounds ground pork
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon dried rubbed sage
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground fennel seed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)

Directions

  1. Combine Ingredients: In a large bowl, thoroughly mix together all the ingredients using your hands.
  2. Form Patties: Shape the mixture into 16 patties, each weighing approximately 2 ounces.
  3. Freeze Patties: Arrange the patties flat on a sheet pan and freeze. Once frozen, transfer them to an airtight container or freezer bag for storage.
  4. Thaw Before Cooking: Before cooking, ensure the patties are fully thawed.
  5. Cook Patties: In a large skillet over medium-high heat, cook the sausages until they are well browned on both sides, about 5 minutes per side.
  6. Check Temperature: Ensure the internal temperature of the patties reaches at least 160°F, as measured by an instant-read thermometer.
