Slow Cooker Apple Kielbasa Bites

Ingredients

  • 1 lb kielbasa sausage, sliced into 1/2 inch pieces
  • 2 large apples, peeled, cored, and chopped
  • 1/2 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup onion, finely chopped

Directions

  1. Arrange the sliced kielbasa in your slow cooker.
  2. In a bowl, combine the chopped apples, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and nutmeg.
  3. Pour the apple mixture over the kielbasa in the slow cooker.
  4. Sprinkle the finely chopped onion on top of the apple and kielbasa mixture.
  5. Cover and cook on low for 4-6 hours, stirring occasionally, until the apples are tender and the kielbasa is well-glazed.
  6. Serve warm, optionally garnished with a sprinkle of fresh parsley.

Variations & Tips

For an extra kick, consider adding a pinch of red pepper flakes or some smoked paprika. To accommodate picky eaters, reduce the mustard and vinegar slightly to mellow the flavors. For a fruitier twist, add a handful of dried cranberries or raisins in the last hour of cooking.
