Lemon Dessert Recipe

Lemon Dessert (also known as Lemon Lush)

Ingredients:

  • 1 1/4 cups of all-purpose flour
  • 3/4 cup of butter
  • 1/4 cup of pecans, plus extra for garnish
  • 8 oz. cream cheese, softened
  • 16 oz. whipped topping (e.g., Cool Whip)
  • 1 cup of powdered sugar
  • 4 small boxes (3.4 oz each) of lemon instant pudding mix
  • 5 cups of milk

Instructions:

FIRST LAYER:

  1. Preheat the oven to 350°F (175°C).
  2. Cut the butter into the flour until crumbly. Mix in the 1/4 cup of pecans. Press the mixture into the bottom of a 9×13 inch baking dish. Bake for 20 minutes or until golden brown. Allow to cool completely.

SECOND LAYER:

  1. In a mixing bowl, beat together the cream cheese and powdered sugar until smooth.
  2. Fold in half of the whipped topping (approximately 8 oz.). Spread this mixture over the cooled crust.

THIRD LAYER:

  1. In another bowl, prepare the lemon pudding mix by whisking it with milk until thickened.
  2. Spread the lemon pudding over the cream cheese layer.

FOURTH LAYER:

  1. Spoon the remaining whipped topping over the lemon pudding layer and gently swirl it with a spoon.
  2. Sprinkle extra pecans on top for garnish.
  3. Refrigerate until ready to serve.
