Fluffy Cloud Cake

Ingredients:

  • 5 eggs
  • 16g baking powder
  • 200g powdered sugar (approximately 1 1/2 cups)
  • 200g butter (approximately 1 3/4 cups)
  • 50g potato starch
  • 300g flour (approximately 2 cups)
  • a pinch of salt
  • 150g yogurt (approximately 1 cup)
  • vanilla extract

Instructions:

  1. Begin by preheating your oven to 180°C (360°F) and greasing a 22cm cake mold.
  2. In a blender, combine the eggs, baking powder, powdered sugar, butter, potato starch, flour, salt, yogurt, and a splash of vanilla extract.
  3. Blend the ingredients on high speed for about 3 minutes or until the batter is smooth and well combined.
  4. Pour the batter into the prepared cake mold, spreading it evenly.
  5. Place the mold in the preheated oven and bake for approximately 40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  6. Once baked, remove the cake from the oven and allow it to cool in the mold for a few minutes before transferring it to a wire rack to cool completely.
  7. Serve and enjoy your deliciously fluffy cloud cake!
