Peruvian Chicken Wings with Peruvian Green Sauce

Making these Peruvian chicken wings is not only incredibly delicious but also remarkably simple. The marinade is quick to whip up, and once the wings are in the oven, it’s all hands-off cooking. By placing them on a wire rack, there’s no need to fuss with flipping halfway through, as with other oven-baked wings. Plus, while the wings are crisping up, you can effortlessly prepare the vibrant green sauce in a food processor or blender. It couldn’t be more effortless.

Ingredients:

Chicken Wings:

  • 3 tablespoons olive oil
  • 6 large garlic cloves, pressed or minced
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 2 teaspoons coconut sugar or brown sugar
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground pepper
  • Juice and zest of 1 lime
  • 2 1/2 pounds chicken wings, separated into flats and drumettes (reserve tips for stock or discard)
  • Oil for greasing the wire rack

Green Sauce:

  • 1 cup fresh cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 2 green Serrano peppers
  • 2 large cloves garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper

Directions:

  1. Begin by preparing the chicken. In a small bowl or glass measuring cup, combine olive oil, pressed garlic, cumin, salt, sugar, paprika, coriander, oregano, pepper, lime juice, and zest. Mix until well combined. Place the chicken wings in a gallon-sized ziplock bag and pour the marinade over them. Seal the bag and massage the chicken to ensure it’s evenly coated. Refrigerate for 1 to 4 hours.
  2. Preheat the oven to 425°F. Once the chicken has marinated, place a wire rack on a rimmed baking sheet and lightly brush it with oil to prevent sticking. Arrange the wings on the rack. Bake in the preheated oven for 45 minutes, or until the wings are cooked through and golden brown, with slightly charred edges.
  3. While the wings are baking, prepare the green sauce. In a food processor or blender, combine all the ingredients for the sauce. Blend until smooth and well combined. Transfer the sauce to a bowl, cover, and refrigerate until ready to serve. Note that the sauce will thicken slightly as it chills.
