Peach Cobbler Pound Cake


Deluxe Peach Cobbler Pound Cake

Ingredients:

  • 1 cup of softened unsalted butter
  • 2 cups of granulated sugar
  • 4 large eggs
  • 1 teaspoon of vanilla extract
  • 3 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of sour cream
  • 2 cups of diced fresh or canned peaches
  • 1 tablespoon of ground cinnamon
  • 1/2 cup of brown sugar

Glaze:

  • 1 cup of powdered sugar
  • 2 tablespoons of milk
  • 1/2 teaspoon of vanilla extract

Directions:

  1. Preheat the oven to 325°F (165°C) and generously grease and flour a 10-inch bundt pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Gradually add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the creamed butter and sugar, alternating with the sour cream, starting and ending with the flour mixture. Gently fold in the diced peaches.
  4. Pour half of the batter into the prepared bundt pan. In a separate small bowl, mix together the ground cinnamon and brown sugar, then sprinkle this mixture evenly over the batter in the pan. Top with the remaining batter.
  5. Bake for 70-80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 15 minutes before carefully inverting it onto a wire rack to cool completely.

For the glaze:

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
