Ingredients

  • 2 large boneless, skinless chicken breasts
  • ¼ cup mayonnaise
  • 2 cloves garlic, minced
  • 1 cup seasoned Panko bread crumbs
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil spray
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Preheat the air fryer to 390 degrees F.
  2. Cut chicken breasts in half to create four thin breasts. Place each thin breast between two pieces of plastic wrap and pound into thin, even pieces with a meat tenderizer. Repeat for all chicken pieces.
  3. In a small bowl, combine mayonnaise and minced garlic. Spread the garlic mayo evenly over the chicken breasts.
  4. In a shallow bowl, mix Panko bread crumbs, Parmesan cheese, salt, and pepper. Coat each chicken breast evenly with the breadcrumb mixture, pressing down gently to adhere.
  5. Coat the air fryer basket with olive oil spray (avoid using PAM as it may damage some baskets).
  6. Place the coated chicken breasts in the air fryer basket and cook for 8 minutes. Flip the chicken and cook for an additional 5-7 minutes until golden brown and crispy. Repeat if necessary to avoid overcrowding the basket.
  7. Once cooked, remove the chicken from the air fryer and serve warm. Garnish with extra Parmesan cheese and chopped parsley.
