My first endeavor with this cheesecake recipe left me utterly enamored. The beauty lies in its simplicity; no oven required, just a few hours of chilling in the fridge. Ingredients:

  • 1 (3 oz.) package lemon Jell-O
  • 1 cup boiling water
  • 3 cups graham cracker crumbs

  • 4 tablespoons lemon juice
  • 1 (12 oz.) can chilled evaporated milk
