Italian Sausage with Peppers and Onions

Italian Sausage with Peppers and Onions

Ingredients:

  • 1/4 cup of extra-virgin olive oil
  • 1 pound of sweet Italian sausage
  • 2 bell peppers, thinly sliced
  • 2 yellow onions, thinly sliced
  • 1 teaspoon of kosher salt
  • 1 teaspoon of freshly ground black pepper
  • 1 tablespoon of Italian seasoning
  • 1/4 cup of chopped fresh basil leaves
  • 4 garlic cloves, finely chopped
  • 2 tablespoons of tomato paste
  • 1 cup of Marsala wine (or chicken broth)
  • 1 (15-ounce) can of diced tomatoes
  • Salt to taste
  • 1/4 teaspoon of red pepper flakes (optional)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the Italian sausages and cook until browned on both sides, approximately 7 to 10 minutes. Once cooked, remove the sausages from the skillet and drain excess oil.
  2. In the same skillet over medium heat, add the Italian seasoning, basil, and chopped garlic. Cook for an additional 2 minutes, allowing the flavors to meld.
  3. Pour in the Marsala wine (or chicken broth), diced tomatoes, and tomato paste. If desired, add the red pepper flakes for a touch of heat.
  4. Add the sliced bell peppers, onions, kosher salt, and black pepper to the skillet. Bring the mixture to a simmer.
  5. Return the cooked sausages to the skillet, nestling them among the vegetables. Reduce the heat to low and simmer for approximately 15 minutes, or until the sauce has thickened to your liking.
  6. Serve the Italian sausage mixture over mashed potatoes, noodles, polenta, or cauliflower rice. Alternatively, if serving as a sandwich, split hoagie rolls lengthwise and hollow out the bottom half. Fill with the sausage and vegetable mixture.
