Exquisite Puff Pastry Cream Horns

Ingredients:

For the Custard Cream:

  • 3 egg yolks
  • 3 tablespoons (30 gr) of all-purpose flour
  • 1/2 cup (100 gr) of sugar
  • 1 teaspoon of vanilla extract
  • 8 oz (235 ml) of milk

For the Cannoncini:

  • 1 sheet of puff pastry, defrosted (about 8 oz, 225 gr)
  • 1/4 cup (50 gr) of sugar
  • 1 egg (for egg wash)
  • Powdered sugar for decoration

Instructions:

Making the Custard Cream:

  1. Heat the milk until hot (not boiling) in a medium-sized pan.
  2. In another bowl, whisk together egg yolks, sugar, vanilla extract, and flour until smooth.
  3. Gradually add the warm milk to the egg mixture, whisking continuously to avoid lumps.
  4. Place the pan over medium heat and stir constantly until the mixture thickens and gently boils.
  5. Reduce the heat and cook for a few more minutes until the desired thickness is achieved.
  6. Transfer the custard to a glass bowl, cover with plastic wrap, and refrigerate for at least one hour to cool.

Preparing the Pastry Horns:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sprinkle sugar on the countertop and puff pastry sheet, then roll out the pastry into a 9 by 12-inch rectangle.
  3. Cut the pastry into 12 strips, each about 1 inch wide.
  4. Roll each strip around a conical horn mold, ensuring the pastry overlaps by about half of its length.
  5. Place the wrapped pastry cones on the prepared baking sheet with the seam side down.
  6. Beat the egg with water to create an egg wash, then lightly brush each pastry cone. (Note: Avoid getting egg wash on the mold to ease removal later.)
  7. Bake the pastry horns for 15-20 minutes or until golden brown.
  8. Allow them to cool slightly before gently removing them from the molds. If stuck, gently rotate the mold within the pastry to release.

Assembly:

  1. Once cooled, fill each pastry horn with the chilled custard using a piping bag.
  2. Optionally, dust with powdered sugar for decoration.
  3. Serve and savor the delightful puff pastry cream horns.
