Delicious and Effortless Chicken Scampi Recipe

Ingredients:

  • 3 tablespoons of flour
  • 1 teaspoon of Italian seasoning
  • 1 ½ lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons of olive oil
  • 4 tablespoons of butter
  • 4 cloves of garlic, minced
  • ¾ cup of dry white wine (Sauvignon Blanc is recommended)
  • ⅛ teaspoon of red pepper flakes
  • 12 ounces of thin spaghetti
  • 2 tablespoons of lemon juice
  • ¼ cup of chopped parsley
  • ⅔ cup of grated Parmesan Cheese
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together the flour and Italian seasoning. Pat the chicken pieces dry with paper towels and dredge them in the flour mixture.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer and cook until browned on both sides and cooked through. Transfer the chicken to a plate.
  3. In the same skillet, melt butter over medium-low heat. Add minced garlic and cook for 1 minute, stirring continuously. Carefully pour in the wine and add red pepper flakes. Increase the heat to medium and cook until the wine is reduced by half, scraping the bottom of the pan to release the browned bits.
  4. Meanwhile, bring a large pot of water to a boil and cook the spaghetti according to package instructions. Reserve 1/2 cup of pasta water before draining.
  5. Remove the skillet from heat and whisk in lemon juice. Return the chicken to the skillet and cook for a minute to warm it up.
  6. In a large serving bowl, toss the drained spaghetti with the sauce and chicken. Sprinkle with chopped parsley and grated Parmesan cheese, and toss to coat. If the pasta seems dry, add a little of the reserved pasta water. Season with salt and pepper to taste.
  7. Serve hot for the best experience. Enjoy your scrumptious chicken scampi!
