Decadent Chocolate Cake Recipe

Ingredients:

  • 250 g unsalted butter, plus extra for greasing the pan
  • 50g cocoa powder
  • ½ tsp fine salt
  • 235 mL water (100mL = 100g)
  • 300 g all-purpose flour
  • 350g granulated sugar
  • 1½ tsp baking soda
  • 2 large eggs
  • 120 g Greek yogurt

For the Glaze:

  • 120 g chopped dark chocolate
  • 120 mL heavy whipping cream (100mL = 100g)

Preparation:

For the Cake:

  1. Preheat the oven to 175°C. Thoroughly grease a Bundt pan with butter and lightly coat with flour. (For a smaller portion, halve the ingredients and use a rectangular loaf pan.)
  2. In a small saucepan, combine the butter, cocoa powder, salt, and water over medium heat. Stir until melted and well combined. Remove from heat and let it cool for 10 minutes.
  3. In a large bowl, mix together the flour, sugar, and baking soda.
  4. Once the butter mixture has cooled, pour it into the dry ingredients and beat until just combined.
  5. Add the eggs, one at a time, beating until fully incorporated. Then add the Greek yogurt and beat until smooth. The batter will be quite liquid.
  6. Transfer the batter to the prepared pan and bake until a toothpick inserted into the center comes out clean, about 35 to 45 minutes, depending on the oven and pan size.
  7. Allow the cake to cool in the pan for 30 minutes, then invert it onto a serving plate. Remove the pan and let the cake cool completely before frosting.

For the Glaze:

  1. While the cake is cooling, prepare the chocolate glaze. Place the chopped chocolate and heavy cream in a heatproof bowl set over a saucepan of simmering water (double boiler). Stir until melted and smooth.
  2. Pour the glaze over the cooled cake, allowing it to cascade down the sides. Slice and serve.
