Ingredients:

- 1 1/2 cups of grated cotija cheese (approximately 125 grams)
- 1 cup of corn starch (about 100 grams)
- 2 tablespoons of cassava flour (approximately 25 grams)
- 1 egg
- 4 tablespoons of whole milk
- 1 teaspoon of baking powder
- 1 teaspoon of sugar
Instructions:
- Heat the vegetable oil in a frying pot (preferably a 2.5-quart dutch oven) over medium heat until it reaches 350 Fahrenheit or 175 Celsius.
- In a bowl, combine the corn starch, cassava flour, sugar, and baking powder. Whisk the ingredients together until well combined.
- Add the grated cotija cheese to the dry mixture and mix thoroughly.
- Incorporate the egg and milk into the mixture, then knead the dough until it reaches a smooth, play dough-like consistency.
- Shape the dough into small round balls, approximately 1.5 inches in diameter or about 30 grams each.
- Carefully place the dough balls into the frying oil, ensuring that the oil maintains a consistent temperature. If the oil temperature exceeds 350 Fahrenheit, adjust the heat accordingly.
- Fry the bunuelos for approximately 6 minutes or until they turn golden brown.
- Once cooked, remove the bunuelos from the oil and transfer them to a plate lined with paper towels to absorb excess oil.
- Allow the bunuelos to cool for about 10 minutes before serving.
