Cherry Cheesecake Lush

Ingredients:

  • 1 package (14 ounces) golden Oreos, crushed in a food processor
  • 1/3 cup melted salted butter
  • 1 tablespoon butter (for preparing the pan)
  • 8 ounces cream cheese, softened to room temperature
  • 3/4 cup granulated sugar
  • 16 ounces frozen whipped topping, thawed
  • 2 small boxes cheesecake-flavored instant pudding mix
  • 3 cups whole milk
  • 2 large cans cherry pie filling
  • 1 cup chopped pecans or walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Butter the inside of a 9×13-inch baking dish and set aside.
  2. In a food processor, crush the golden Oreos until they form small crumbs.
  3. Add the melted butter to the crushed cookies and pulse until well combined.
  4. Press the cookie mixture into the bottom of the prepared baking dish, making the layer as even as possible.
  5. Place the crust in the freezer for 10 minutes while preparing the filling.
  6. In a bowl, beat together the cream cheese, sugar, vanilla extract, and 1 cup of whipped topping until smooth.
  7. Spread this cream cheese mixture evenly over the cookie crust and return the dish to the freezer for another 10 minutes.
  8. In another bowl, combine the instant pudding mix, milk, and 1/2 cup of whipped topping. Whisk until the mixture begins to thicken.
  9. Spread the pudding mixture over the chilled cream cheese layer, smoothing it evenly, and chill for 30 minutes or until set.
  10. After 30 minutes, carefully pour the cherry pie filling over the pudding layer to avoid mixing the layers.
  11. Carefully spread the remaining whipped topping over the entire dessert.
  12. Top with chopped pecans or walnuts and chill for 1 to 2 hours before serving.
