Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup softened butter
  • 2 large eggs
  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts (optional)

Directions:

  1. Preheat the oven to 325°F (165°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas, milk, and cinnamon.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the banana mixture, stirring just until moistened. Fold in the walnuts if desired.
  4. Pour the batter into the prepared loaf pan and bake for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
