Delicious Garlic Parmesan Pork Chops with Garlic-n-Herb Mashed Potatoes & Cheese Broccoli
Ingredients:
Garlic Parmesan Pork Chops:
- 4 boneless pork chops
- 1/4 cup grated Parmesan cheese
- 2 tablespoons Italian seasoned breadcrumbs
- 1/4 teaspoon smoked paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons olive oil
Garlic Herb Mashed Potatoes:
- 2 pounds gold potatoes
- 1 cup beef broth
- 4 tablespoons cream cheese
- 4 tablespoons unsalted butter
- 4 tablespoons roasted garlic
- 4 tablespoons fresh herbs, minced (such as basil, chives, rosemary, oregano)
- 2 teaspoons salt
- Freshly ground pepper
Cheese Broccoli:
- 4 cups broccoli
- 1 cup water
- 1 cup milk
- 1 tablespoon corn starch
- 1 cup shredded cheddar cheese
- 1 tablespoon grated Parmesan cheese
- Salt and pepper to taste
Instructions:
Garlic Parmesan Pork Chops:
- Preheat oven to 450 degrees Fahrenheit.
- In a pie plate, mix Parmesan cheese, breadcrumbs, paprika, parsley, garlic powder, and pepper.
- Heat olive oil in a frying pan over medium-high heat.
- Dip each pork chop in the breadcrumb mixture, ensuring it’s well coated.
- Sauté pork chops in the pan for 2 minutes on each side until golden brown.
- Transfer pork chops to a glass baking dish or leave them in the oven-safe pan.
- Bake pork chops in the preheated oven for 8-10 minutes or until the internal temperature reaches 145 degrees Fahrenheit.
- Remove from oven and let rest for 5 minutes before serving.
Garlic Herb Mashed Potatoes:
- Clean potatoes and cut them into 1-inch sized pieces.
- Cook potatoes in a covered pot over medium heat with beef broth until very tender (about 30-40 minutes) or pressure cook on high for 12 minutes.
- Add cream cheese, butter, roasted garlic, herbs, salt, and pepper to the cooked potatoes and mash together until well blended.
- Adjust seasoning with additional salt and pepper if needed.
Cheese Broccoli:
- Wash broccoli and place it in a non-stick skillet.
- Add 1 cup water and bring to a simmer over medium heat. Cover and steam broccoli for 3-5 minutes.
- Remove broccoli from skillet and place it in a bowl, covering to keep warm.
- In a bowl, whisk together milk and cornstarch. Pour the mixture into the skillet and whisk over medium heat until it thickens.
- Reduce heat to low and add shredded cheddar cheese, whisking until smooth.
- Season cheese sauce with salt and pepper, then serve over the broccoli.
