Kickin Fried Chicken Recipe

Ingredients:

  • 8 pieces of chicken (breast, thighs, legs, etc.)
  • 1 cup of milk
  • 2 tablespoons of pickle juice
  • 1 teaspoon of Tabasco sauce
  • 1 egg, beaten
  • 2 cups of flour
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of ground sage
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of oregano

Directions:

  1. In a bowl, mix milk, beaten egg, Tabasco sauce, and pickle juice.
  2. Add the chicken pieces to the mixture and marinate in the refrigerator for 1 hour.
  3. In another bowl, combine flour, paprika, garlic powder, onion powder, ground sage, cayenne pepper, black pepper, salt, and oregano for dredging.
  4. Heat oil to 350 degrees Fahrenheit, either in a deep fryer or an iron skillet.
  5. Dredge each marinated chicken piece in the flour mixture, then back into the marinade, and again in the flour mixture.
  6. Place the coated chicken pieces on a cookie sheet and let sit for 5 minutes before frying.
  7. Fry 2-3 pieces at a time in the preheated oil for 7-8 minutes for boneless chicken or 10-12 minutes for bone-in chicken, turning occasionally until golden brown and the internal temperature reaches 160 degrees Fahrenheit.
  8. Optionally, preheat the oven to 250 degrees Fahrenheit and place the fried chicken on a cooling rack over a cookie sheet to keep warm and crisp while finishing up the remaining pieces.
