Kickin Fried Chicken Recipe
Ingredients:
- 8 pieces of chicken (breast, thighs, legs, etc.)
- 1 cup of milk
- 2 tablespoons of pickle juice
- 1 teaspoon of Tabasco sauce
- 1 egg, beaten
- 2 cups of flour
- 1/2 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- 1/4 teaspoon of ground sage
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of salt
- 1/4 teaspoon of oregano
Directions:
- In a bowl, mix milk, beaten egg, Tabasco sauce, and pickle juice.
- Add the chicken pieces to the mixture and marinate in the refrigerator for 1 hour.
- In another bowl, combine flour, paprika, garlic powder, onion powder, ground sage, cayenne pepper, black pepper, salt, and oregano for dredging.
- Heat oil to 350 degrees Fahrenheit, either in a deep fryer or an iron skillet.
- Dredge each marinated chicken piece in the flour mixture, then back into the marinade, and again in the flour mixture.
- Place the coated chicken pieces on a cookie sheet and let sit for 5 minutes before frying.
- Fry 2-3 pieces at a time in the preheated oil for 7-8 minutes for boneless chicken or 10-12 minutes for bone-in chicken, turning occasionally until golden brown and the internal temperature reaches 160 degrees Fahrenheit.
- Optionally, preheat the oven to 250 degrees Fahrenheit and place the fried chicken on a cooling rack over a cookie sheet to keep warm and crisp while finishing up the remaining pieces.
