Mandarin Orange Cake with Pineapple Coconut Frosting

Ingredients:

  • 1 package yellow cake mix
  • 11 oz can mandarin oranges (with juice, undrained)
  • 1 stick melted butter
  • 1/4 cup vegetable oil
  • 4 large eggs
  • 1 can crushed pineapple (reserve juice for cake, use pineapple for frosting)
  • 12 oz thawed whipped topping
  • 1 box instant French vanilla or pistachio pudding
  • 1-1/2 cups shredded coconut

Instructions:

  1. Preheat the oven to 350°F. Grease and flour two 9-inch cake pans.
  2. In a mixing bowl, blend cake mix, mandarin oranges, melted butter, oil, eggs, coconut, and pudding mix until thoroughly combined.
  3. Pour the batter into prepared pans and bake for approximately 30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow cakes to cool on a wire rack for 10 minutes.
  5. Use a fork to create small holes on top of the cakes. Drizzle pineapple juice over the cakes, filling all holes.
  6. In another mixing bowl, combine whipped topping, crushed pineapple, and shredded coconut. Spread the frosting evenly over the cakes.
