Ingredients:

  • 2 cups leftover mashed potatoes
  • 1/4 cup all-purpose flour
  • 1/4 cup milk
  • 1 beaten egg
  • 1 tablespoon minced onion
  • 1 tablespoon minced green pepper
  • Bacon drippings or cooking oil
  • Salt and pepper to taste (optional)

Directions:

  1. In a mixing bowl, combine leftover mashed potatoes, all-purpose flour, milk, beaten egg, minced onion, and minced green pepper.
  2. Season the mixture with salt and pepper to your taste preferences.
  3. Form the mixture into 3-inch round patties.
  4. In a skillet, heat bacon drippings or cooking oil.
  5. Fry the patties in the heated bacon drippings or cooking oil until golden brown on both sides.
  6. Once browned, drain the potato pancakes.
  7. Serve and enjoy your delicious potato pancakes.
