Pair this Tuscan Chicken with pasta, rice, or mashed potatoes for an easy weeknight dinner the entire family will love!

Ingredients:

  • 2 large chicken breasts, halved (1 1/2 lbs)
  • 1 tsp fine sea salt, divided, plus more to taste
  • 1/2 tsp freshly ground black pepper, divided
  • 1/2 tsp garlic powder
  • 2 Tbsp light olive oil, divided
  • 1 Tbsp unsalted butter
  • 8 oz brown mushrooms, thickly sliced
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/4 cup green onion, green parts, chopped
  • 3 garlic cloves, minced
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup parmesan cheese, finely shredded
  • 2 cups fresh baby spinach

Instructions:

  1. Preheat your oven to 400°F (200°C). Prick the eggplants with a fork and roast them until the skin is charred and the flesh is tender, about 30-40 minutes.
  2. Let the eggplants cool, then peel off the skin and place the flesh in a blender or food processor.
  3. Add tahini, minced garlic, lemon juice, olive oil, salt, and pepper to the blender. Blend until smooth and creamy.
  4. Adjust the seasoning to taste and transfer the Baba Ganoush to a serving dish.
  5. Drizzle with extra olive oil and garnish with fresh parsley.
  6. Serve with pita bread or veggies and revel in the exquisite deliciousness!
