Santa Fe Chicken Foil Packets
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1/4 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Foil Packets: Lay four large sheets of aluminum foil on a flat surface.
- Place Chicken: Place a chicken breast in the center of each foil sheet.
- Mix Vegetables: In a bowl, mix black beans, corn, cherry tomatoes, bell pepper, and red onion.
- Spoon Vegetables: Spoon the vegetable mixture over each chicken breast.
- Prepare Spice Mixture: In a small bowl, whisk together olive oil, cumin, chili powder, paprika, salt, and pepper.
- Drizzle Spice Mixture: Drizzle the spice mixture over the chicken and vegetables.
- Fold and Seal: Fold the foil over the chicken and vegetables, sealing the edges to create packets.
- Bake: Place the foil packets on a baking sheet and bake for 25-30 minutes or until the chicken is cooked through.
- Garnish: Garnish with fresh cilantro before serving.
