Indulge in the creamy goodness of these twice-baked potatoes. A perfect side dish that combines fluffy potatoes with savory ingredients.

Ingredients:

  • 4 large baking potatoes
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 green onions, finely chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork a few times. Place them on a baking sheet and bake for about 1 hour, or until they are tender when pierced with a fork.
  3. Allow the potatoes to cool slightly. Cut each potato in half lengthwise, and carefully scoop out the insides, leaving a thin layer of potato attached to the skin. Place the scooped-out potato into a mixing bowl.
  4. In the mixing bowl with the scooped-out potato, add sour cream, softened butter, shredded cheddar cheese, and milk. Mash the mixture until smooth and well combined. Season with salt and pepper to taste.
  5. If you’re using bacon, fold in the crumbled bacon into the mashed potato mixture.
  6. Spoon the mashed potato mixture back into the potato skins, creating a rounded top. You can use a piping bag or simply use a spoon for this.
  7. Place the filled potatoes back onto the baking sheet. Bake in the oven for an additional 15-20 minutes, or until the tops are golden brown.
  8. Remove the twice-baked potatoes from the oven and sprinkle chopped green onions on top as a garnish.
  9. Serve the twice-baked potatoes hot as a delightful side dish.
