Super Moist Microwave Milo Cake

Ingredients:

  • 1 cup all-purpose flour
  • ¾ cup sugar
  • 2½ teaspoons baking powder
  • Pinch of salt
  • 5 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3 heaped tablespoons Milo
  • 1 cup hot water
  • 1 heaped tablespoon coffee

Method:

  1. In a bowl, beat all the ingredients together with an electric beater for about a minute until well combined. Pour the batter into a 2-liter ice cream tub.
  2. Microwave the batter on high for 8 minutes. Allow it to rest in the microwave for a few more minutes, then take it out of the tub and let it cool down.

For Milo Ganache:

  • ½ cup sugar
  • 2 heaped tablespoons cornflour
  • 3 tablespoons Milo
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions:

  1. In a separate bowl, mix sugar, cornflour, and Milo.
  2. In a saucepan, add the dry mixture and slowly whisk in 1 cup of milk. Place it on medium heat and stir continuously until it thickens into a smooth paste.
  3. Once it starts to bubble, remove it from heat, add vanilla extract and butter, and mix thoroughly.
  4. Cut the cake into two slices to create a sandwich. Spread Milo ganache on one half, place the other half on top, and generously cover the entire cake with the remaining Milo ganache.
